  • 1 cup sliced cucumber (about 1 medium cucumber)
  • ½ cup toasted almonds
  • ½ cup crumbled feta cheese (or vegan alternative)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Wash mixed greens thoroughly and pat dry. Slice strawberries and cucumber.
