Ingredients

Scale
  • 4 cups broth
  • 2 cups mushrooms
  • 4 fresh garlic cloves
  • 2 inches fresh ginger
  • 300 grams bok choy
  • 200 grams rice noodles
  • 300 grams protein (chicken, beef, turkey, or tofu)
  • 3 tablespoons coconut aminos
  • 2 tablespoons sesame oil

Instructions

  1. Prepare ingredients by dicing garlic and ginger; chop bok choy into halves or quarters; slice your protein into bite-sized pieces.
  2. In a large Dutch oven or stockpot over medium heat, add 1 tablespoon cooking oil.
  3. Sauté chopped ginger and garlic for about one minute until fragrant.
  4. Add mushrooms (and scallions if desired) along with a tablespoon of sesame oil; sauté for an additional 2-3 minutes.
  5. If using raw protein, add it now and cook until browned.
  6. Pour in broth; cover and bring to a boil for about 5 minutes before reducing heat.
  7. Season the broth with coconut aminos and optional red pepper flakes.
  8. Cook rice noodles according to package instructions (about 5-6 minutes).
  9. Stir in cooked protein if using pre-cooked options.
  10. Add bok choy; cook until tender-crisp (about 4 minutes total).
  11. Turn off heat; add remaining sesame oil and coconut aminos as desired.
  12. Serve hot garnished with red pepper flakes or chopped scallions.
