Ingredients

- 1 cup desiccated coconut (+ extra for rolling)
- ½ cup sweetened condensed milk
Instructions
- Prepare the Mango Purée: Scoop out the pulp from two ripe mangoes and blend until smooth. Measure out one cup of purée and set aside.
- Toast the Coconut: In a nonstick pan over low heat, dry roast one cup of desiccated coconut for about one minute.
- Cook the Mixture: Combine the mango purée and sweetened condensed milk with the toasted coconut in the pan. Stir well and cook over medium heat for 5–7 minutes until thickened into a dough-like consistency.
- Shape the Truffles: Allow the mixture to cool until manageable, then scoop out about one tablespoon and roll into balls.
- Coat & Store: Roll each ball in extra desiccated coconut for a lovely finish. Store in an airtight container in the refrigerator for up to one week.
