  • 3 tablespoons low-sodium soy sauce
  • 1 small onion (sliced)
  • 1 small red bell pepper (cut into cubes)
  • 1 small green bell pepper (cut into cubes)
  • 3 cloves garlic (minced)
  • 1 inch ginger (thinly sliced)
  • Vegetable oil (for frying)

Instructions

  1. Prepare the sauce by whisking together all sauce ingredients in a bowl; set aside.
  2. In a mixing bowl, combine chicken with soy sauce and sesame oil; let marinate for about 10 minutes.
  3. Coat marinated chicken with cornstarch, ensuring even coverage.
  4. Heat vegetable oil in a wok over high heat; fry chicken until golden brown and cooked through, about 3 to 4 minutes. Drain on paper towels.
  5. Remove excess oil from the wok but leave some; stir-fry onion, bell peppers, dried chilies, garlic, ginger, and Sichuan peppercorns until fragrant.
  6. Add fried chicken back to the wok along with the sauce; toss well for another minute and serve immediately.
