  • 1 1/2 tsp Baking soda

  • 3/4 cup Oil (canola or vegetable)
  • 2 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 1 1/4 cup Buttermilk (room temperature)
  • 1 cup Hot water
  • 2 1/2 cups Unsalted butter (slightly cold)
  • 7 1/2 cups Powdered sugar
  • 1 tsp Peppermint extract
  • 1 tsp Pure vanilla extract
  • 1/2 tsp Salt
  • 1/2 cup Heavy cream
  • Food dye (blue, green, brown)
  • 4 oz Semisweet chocolate bar (chopped into small pieces)
  • 2 Packages of Andes Mints (40 of the bars will be for the filling, the rest for decoration)

Instructions

  1. Preheat oven to 350°F. Prepare three 8-inch cake pans with nonstick spray and parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the oil, vanilla extract, buttermilk, and eggs; gradually stir in hot water.
  4. Combine wet and dry mixtures until just combined.
  5. Divide batter among the prepared pans and bake for 24-27 minutes until a toothpick comes out clean.
  6. Cool cakes completely before frosting with mint-flavored buttercream made from softened butter, powdered sugar, peppermint extract, and chopped chocolate.
