  • 2 cups apple cider (reduced to 1/4 cup)
  • ½ cup unsalted butter (room temperature, divided)
  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted)
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter (room temperature) for buttercream
  • 1 ¼1 ½ cups powdered sugar (sifted)
  • 1 pinch salt
  • 4 ½ ounces cream cheese (room temperature)
  • 2 tablespoons brown sugar (light or dark)
  • 2 cups powdered sugar (sifted, plus more if needed)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Simmer apple cider in a saucepan until reduced to 1/4 cup; set aside to cool.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. Beat together 6 tablespoons of room temperature butter with both sugars until well combined. Add in vanilla followed by eggs. Mix in cooled apple cider along with apple butter or applesauce until fully incorporated.
  4. Gradually add dry ingredients into wet mixture until just combined.
  5. Drop mounds of dough about 1½ tablespoons each onto prepared baking sheets, spaced three inches apart. Bake for about 11-13 minutes or until cookies spring back when touched lightly. Allow cookies to cool before transferring to a wire rack.
  6. Brush cookies with reserved melted butter then sprinkle with cinnamon sugar or toss in it while still warm. Let them cool completely before filling.
