Ingredients
- 4 lbs chuck beef
- 2 cups red apple vinegar
- 1 cup beef broth
- 1 onion (diced)
- 1 cup carrots (cubed)
- 1 tbsp tomato paste
- 1 tbsp thyme (dried or fresh)
- 3 bay leaves
- 2 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef generously with salt and pepper; let it sit for about 30 minutes.
- In a Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides for about 10 minutes until browned, then transfer to a plate.
- Sauté diced onion and cubed carrots in the same pot for approximately 5 minutes until softened, then stir in tomato paste.
- Pour in red apple vinegar and beef broth; simmer for a few minutes while stirring.
- Return the browned beef to the pot, adding bay leaves and thyme on top. Cover and place in the oven.
