  • 1 cup granulated sugar
  • 1 cup dried apricots, roughly chopped
  • 4 cups water (for brewing tea)
  • 6 black tea bags
  • 1 cup freshly squeezed lemon juice (from about 68 lemons)

Instructions

  1. In a medium saucepan, combine 4 cups of water and sugar; heat until sugar dissolves.
  2. Stir in chopped apricots; simmer for 20–25 minutes until soft.
  3. Strain syrup through a fine-mesh sieve into a bowl; let cool.
  4. Brew black tea in another saucepan using remaining water; steep for 3–5 minutes.
  5. Combine cooled apricot syrup with lemon juice in a large pitcher; add brewed tea and mix well.
  6. Chill in the refrigerator for at least 30 minutes before serving over ice.
