Ingredients
- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 1 piece ginger (3 inches), peeled and finely chopped
- 1 bundle scallions, divided into whites and greens
- 10 cups water
- 8 oz dried ramen noodles
- 1 cup carrot, cut into thin matchsticks
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- Crispy chili oil, to taste
- Kosher salt, to taste
- Freshly ground black or white pepper, to taste
Instructions
- Gather all ingredients and chop garlic, ginger, scallions, and carrots.
- In a large pot over medium heat, combine chicken thighs with water. Bring to a boil, skimming off foam.
- Reduce heat to simmer for 15 minutes until chicken is fully cooked; remove and shred.
- Add garlic, ginger, scallion whites, salt, pepper, black rice vinegar, soy sauce, and sesame oil to the pot; stir well.
- Return shredded chicken to the pot along with ramen noodles. Cook for about 5 minutes until noodles are tender.
- Stir in matchstick carrots during the last minute of cooking. Serve garnished with scallion greens.
