Ingredients
- 1 lb dried pinto beans
- 4 cups chicken stock
- 1 bottle beef broth
- 2 cups water
- 1 medium onion, chopped
- 2 jalapeño peppers, seeded and finely chopped
- 3 cloves garlic, minced
- 6 slices turkey bacon, roughly chopped
- ½ cup fresh cilantro, chopped
- 2 tomatoes, roughly chopped
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Soak the pinto beans overnight in water.
- Drain the beans and place them in a large pot. Add chicken stock, beef broth, and water along with salt beef or chicken bone.
- Simmer for about 1½ hours over low heat.
- In a skillet, cook the turkey bacon until crispy; set aside.
- Sauté onions, jalapeños, and garlic in the same skillet until soft.
- Add sautéed vegetables and turkey bacon to the pot with the beans along with spices (cumin, oregano) and chopped tomatoes.
- Continue simmering for another 1½ hours until tender.
