  • 1 cup sugar (for caramel)
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 3 large eggs
  • 2 egg yolks
  • 1 tbsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Prepare the caramel by melting sugar in a medium saucepan over medium heat until golden amber. Pour into a round baking dish, swirling to coat.
  2. In a blender, combine evaporated milk, sweetened condensed milk, eggs, egg yolks, vanilla extract, and salt; blend until smooth. Pour over the caramel in the baking dish.
  3. Preheat oven to 350°F (175°C). Place the filled baking dish in a larger baking pan and add hot water until halfway up the sides of the flan dish. Bake for 50-60 minutes until set but slightly jiggly in the center.
  4. Cool in the water bath and refrigerate for at least 4 hours before serving. Run a knife around the edges and invert onto a plate to serve.
