  • 8 cups vegetable broth
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 cup chopped zucchini
  • 1 cup chopped yellow squash
  • 1 cup green beans, trimmed and cut
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup small pasta (like ditalini or elbow macaroni)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery; cook until softened (8–10 minutes).
  2. Stir in minced garlic, oregano, basil, and optional red pepper flakes; cook for 1 minute.
  3. Pour in vegetable broth and diced tomatoes; bring to a boil.
  4. Add zucchini, yellow squash, green beans, cannellini beans, and kidney beans; reduce heat and simmer for 15 minutes.
  5. Stir in pasta; cook according to package instructions until al dente (8–10 minutes).
  6. Season with salt and pepper to taste before serving.
