  • 2 1/2 cups whole milk
  • 1 large piece lemon peel (including pith)
  • 1 large piece orange peel (including pith)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster (superfine))
  • Additional sugar (for caramelization)
  • Fresh fruit or berries (for decoration)

Instructions

  1. Heat the milk in a heavy-based saucepan over medium heat with lemon peel, orange peel, and cinnamon stick until simmering; then remove from heat.
  2. Dissolve cornstarch in a splash of water to create a slurry.
  3. Whisk together egg yolks and sugar until pale; gradually add cornstarch slurry and hot milk.
  4. Remove peels and cinnamon from milk; slowly combine with egg mixture, whisking constantly.
  5. Cook on low heat until thickened like pudding, then divide into ramekins.
  6. Cover with plastic wrap and chill for 4 hours or overnight.
  7. Before serving, sprinkle sugar on top and caramelize using a blowtorch or under the broiler.
  8. Optional: Garnish with fresh fruit before serving.
