Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • ½ cup diced cucumber
  • ½ cup chopped tomatoes
  • 1 small jalapeño, deseeded and finely chopped
  • ¼ cup diced red onion
  • 2 tbsp chopped cilantro
  • ½ cup + 2 tbsp chunky salsa (mild, medium or hot)
  • 1 large avocado, diced
  • Juice of 2 limes
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry with a paper towel and cut them into bite-sized pieces. Place in a large mixing bowl.
  2. Add diced cucumber, chopped tomatoes, finely chopped jalapeño, diced red onion, and cilantro to the bowl.
  3. Pour salsa over the shrimp mixture and squeeze lime juice on top. Mix gently until well combined.
  4. Season generously with salt and black pepper; mix again.
  5. Just before serving, sprinkle diced avocado on top and serve alongside tortilla chips or chill in the fridge for enhanced flavors.
