  • 1 whole brisket
  • Mustard
  • Pepper-forward brisket rub
  • Hickory pellets
  • 2 whole onions
  • Avocado oil
  • Sourdough bread
  • Colby Jack cheese
  • Provolone cheese
  • Fried crispy onions

Instructions

  1. Trim the brisket and coat it with mustard and brisket rub. Refrigerate for 1–2 hours.
  2. Preheat the pellet smoker to 100°C and smoke the brisket for 9–10 hours until it reaches an internal temperature of 74–77°C.
  3. Wrap the brisket in butcher paper with apple cider vinegar and beef tallow, then return it to the smoker at 120°C until it reaches 96–97°C.
  4. Allow the brisket to rest wrapped in a cooler for 2–3 hours.
  5. Sauté diced onions in avocado oil and butter until caramelized.
  6. Assemble sandwiches with sourdough, cheese, sliced brisket, caramelized onions, fried onions, BBQ sauce, and more cheese.
  7. Toast in a cast iron skillet until golden brown.
