Ingredients

  • ⅓ cup olive oil
  • 2 cloves garlic
  • 12 chillies
  • Juice and zest of 1 lemon
  • 8 large prawns (prepared with shells on)
  • Salt & pepper to taste
  • Fresh lemon wedges for serving
  • Fresh crusty bread of your choice for dipping in the sauce

Instructions

  1. Prepare your BBQ grill by igniting firelighters and adding charcoal until all coals are white hot.
  2. In a pan, heat olive oil and sauté grated garlic and sliced chillies over medium heat for about 2 minutes. Add lemon juice and zest, cooking until fragrant.
  3. Marinate the prawns by coating them in half of the garlic mixture.
  4. Grill the prawns on high heat for about 1 minute per side until they turn pink and opaque.
  5. Drizzle remaining marinade over grilled prawns and serve immediately with lemon wedges and crusty bread.
