  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the cubed beef until browned on all sides, then remove from the pot.
  2. In the same pot, sauté diced onion and minced garlic until soft.
  3. Return beef to the pot and add sliced carrots, cubed potatoes, beef broth, apple vinegar (if using), bay leaf, dried thyme, and Worcestershire sauce. Stir well.
  4. Bring to a boil, reduce heat to low, cover, and let simmer for 1.5 to 2 hours until the beef is tender.
  5. While the stew simmers, hollow out individual bread loaves for serving.
  6. Ladle hot stew into each bread bowl and serve immediately.
