Ingredients

  • 160gm whole raw ZZ2 almonds
  • 190 gm flour
  • 160 gm plant-based butter
  • 90 gm Demerara sugar
  • 1/2 tsp vanilla extract
  • 1 cup fresh or frozen berries (strawberry or raspberry or a combination)
  • ¼ cup sugar
  • 1 Tbsp lemon juice
  • ¼ cup water
  • 230 gms cream cheese (vegan option available)
  • 100 g icing sugar
  • 150 ml berry coulis (cooled)
  • 400 ml whipped cream (or coconut cream for a vegan alternative)
  • 3 leaves plant-based gelling agent (like agar-agar or pectin)
  • Fresh strawberries & raspberries for garnish (optional)
  • Any leftover berry coulis to garnish (optional)
  • Whipped cream to garnish (optional)

Instructions

  1. Preheat the oven to 160°C (320°F). In a food processor, blend almonds, flour, butter, sugar, and vanilla extract until crumbly.
  2. Spread the mixture on a baking tray and bake for 30-40 minutes until golden brown; set aside to cool.
  3. For the berry coulis, simmer berries, sugar, lemon juice, and water in a pot for 15 minutes; let it cool.
  4. Combine soaked plant-based gelling agent with cream until dissolved. In a bowl, mix cream cheese and cooled berry coulis using an electric mixer.
  5. Whip cream separately until stiff peaks form and fold gently into the cream cheese mixture.
  6. Layer the almond crumble and cheesecake filling in serving glasses. Chill for at least 4 hours before serving.
  7. Garnish with fresh berries, whipped cream, and additional coulis if desired.
