  • 1 can (15.5 oz) garbanzo beans
  • 1 1/2 cups diced English cucumber
  • 1 1/2 cups cherry tomatoes
  • 1/2 medium red onion
  • 1/2 bell pepper
  • 1/4 cup chopped fresh basil
  • 1/4 cup minced parsley
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic
  • Seasonings: dried oregano, salt, black pepper

Instructions

  1. Rinse and drain both cans of beans.
  2. Dice cucumber, halved cherry tomatoes, red onion, and bell pepper on a cutting board.
  3. In a mixing bowl, combine kidney beans, garbanzo beans, diced cucumber, cherry tomatoes, red onion, and bell pepper.
