  • 2 small green peppers, diced
  • 1 small yellow onion, diced
  • 2 cans diced tomatoes (15 ounces each)
  • 1 can tomato sauce (15 ounces)
  • 1 can tomato paste (6 ounces)
  • 2 cans kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)
  • 15 ounces water

Instructions

  1. Sauté diced green peppers and onions in a large dutch oven until translucent.
  2. Add spices (except baking soda) and cook for another 1-2 minutes.
  3. Brown the ground beef or turkey until just cooked through.
  4. Stir in tomato sauce, diced tomatoes, water, and tomato paste until well mixed.
  5. Simmer on medium-low heat for about 15 minutes before adding drained beans.
  6. Mix in baking soda; stir until bubbles settle down.
  7. Serve hot with your choice of toppings.
