Ingredients
- 250 g softened butter
- 250 g caster sugar
- 1 teaspoon vanilla extract
- 4 medium eggs
- 250 g self-raising flour
- 3 tablespoons milk
- Zest of 1 orange
- 200 g icing sugar
- 2 tablespoons freshly squeezed orange juice
- 1–2 tablespoons orange zest
Instructions
- Preheat the oven to 180℃ (160℃ for fan ovens). Line an 8×10 inch baking tin with baking paper.
- In a large mixing bowl, whisk together the softened butter and caster sugar until light and fluffy. Add the vanilla extract.
- Gradually add the eggs one at a time, mixing well after each addition. Slowly incorporate the self-raising flour and milk until smooth. Stir in the orange zest.
- Pour the batter into the prepared baking tin and spread evenly. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cool in the tin for about 10 minutes before transferring to a wire rack to cool completely before glazing.
