  • 8 oz mozzarella balls, halved
  • 4 oz turkey slices, quartered
  • 1 cup artichoke hearts, coarsely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted black olives, sliced
  • 1/3 cup extra-virgin olive oil
  • 1 garlic clove, finely chopped
  • 2 tbsp red apple vinegar
  • 1 tbsp finely chopped fresh parsley
  • 2 tsp Italian seasoning
  • Pinch of crushed red pepper flakes
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked fusilli pasta with the halved mozzarella balls, quartered turkey slices, coarsely chopped artichokes, halved cherry tomatoes, and sliced olives.
  2. For the dressing, mix the extra-virgin olive oil, chopped garlic, red apple vinegar, parsley, Italian seasoning, and crushed red pepper flakes in a jar. Seal and shake well.
  3. Pour the dressing over the salad mixture and toss gently until everything is well coated.
