  • 4 ounces sharp cheddar cheese (cut into small cubes)
  • 6 slices turkey bacon (cooked and crumbled)
  • 1 cup Panko breadcrumbs
  • 3 large eggs (lightly beaten)
  • ¼ cup freshly chopped parsley
  • 8 tablespoons unsalted butter
  • ½ teaspoon garlic powder
  • 2 tablespoons whole milk
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Vegetable oil (for deep frying)
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 2 teaspoons smoked paprika
  • 2 tablespoons fresh parsley (finely chopped)
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Boil the cubed russet potatoes in salted water until tender, then drain and mash in a large bowl.
  2. Mix in provolone, sharp cheddar, turkey bacon, garlic powder, parsley, milk, sea salt, and black pepper until well combined.
  3. Shape the mixture into small balls or patties. Roll each in flour, dip in beaten eggs, then coat with Panko breadcrumbs.
  4. Heat vegetable oil in a deep fryer or large pot over medium heat. Fry each croquette for about 3–4 minutes on each side until golden brown.
  5. For the dipping sauce, mix sour cream with lemon juice, smoked paprika, chopped parsley, turkey bacon bits, sea salt, and black pepper until smooth.
