  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 45 Biscoff cookies (for topping)

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together sugars, eggs, and vanilla until combined.
  3. Melt butter and chocolate chips together in a microwave-safe bowl; whisk in cocoa powder.
  4. Combine the melted mixture with the egg mixture until just blended.
  5. Gently fold in flour, espresso powder, and salt.
  6. Pour half of the batter into the pan, layer with frozen cookie butter, then top with remaining batter.
  7. Press broken Biscoff cookies into the surface and drizzle extra cookie butter on top.
  8. Bake for 30-40 minutes or until a toothpick comes out with moist crumbs. Let cool completely before cutting.
