- 8 oz. mascarpone cheese
- 8 oz. cream cheese, softened
- ½ cup + 2 tablespoons caster sugar
- 2 tablespoons cornstarch
- 2 eggs
- 1 teaspoon vanilla extract
- 1 and 2/3 cups blueberries
Instructions
- Preheat oven to 350°F. Line a 9-inch springform pan with parchment paper.
- In a bowl, combine flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest.
- Mix in cold butter until the mixture resembles crumbs.
- Stir in eggs and vanilla extract until combined.
- Press two-thirds of the mixture into the prepared pan to form the crust.
- In another bowl, mix mascarpone, cream cheese, vanilla extract, caster sugar, and cornstarch until smooth. Gently fold in eggs.
- Pour half of the cheesecake mixture over the crust; scatter blueberries on top. Add remaining cheesecake mixture and top with more blueberries and crumbs.
- Bake for about 65–75 minutes until golden brown.
- Prepare glaze by mixing powdered sugar with milk to desired consistency.
