Ingredients

  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter, cubed
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons cornstarch
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat oven to 350°F. Line a 9-inch springform pan with parchment paper.
  2. In a bowl, combine flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest.
  3. Mix in cold butter until the mixture resembles crumbs.
  4. Stir in eggs and vanilla extract until combined.
  5. Press two-thirds of the mixture into the prepared pan to form the crust.
  6. In another bowl, mix mascarpone, cream cheese, vanilla extract, caster sugar, and cornstarch until smooth. Gently fold in eggs.
  7. Pour half of the cheesecake mixture over the crust; scatter blueberries on top. Add remaining cheesecake mixture and top with more blueberries and crumbs.
  8. Bake for about 65–75 minutes until golden brown.
  9. Prepare glaze by mixing powdered sugar with milk to desired consistency.
