  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar (for swirl)
  • 1 1/2 tsp ground cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a larger bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add mashed bananas, yogurt, and vanilla until smooth.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Combine sugar and cinnamon for the swirl mixture.
  6. Pour half the batter into the pan; sprinkle half the swirl mixture and half the blueberries. Repeat with remaining batter, topping with leftover swirl mixture and blueberries.
  7. Gently swirl through batter using a knife.
  8. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  9. Cool for 10 minutes before transferring to a wire rack.
