  • 18 ounces fresh blueberries
  • 1/3 cup granulated sugar
  • 3 tablespoons raspberry preserves (optional)
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 & 1/2 tablespoons cornstarch
  • 2/3 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 5 tablespoons butter (chilled and cubed)

Instructions

  1. Preheat your oven to 425°F (220°C). Lightly coat a 9-inch pie plate with nonstick spray.
  2. Roll out the pie dough and press it into the pie plate. Freeze while preparing the filling.
  3. In a bowl, combine blueberries, sugar, raspberry preserves (if using), lemon juice, zest, vanilla extract, and cornstarch. Set aside for 15 minutes.
  4. For the streusel topping, mix flour, brown sugar, granulated sugar, and cinnamon in another bowl. Cut in butter until crumbly; chill covered.
  5. Pour the blueberry mixture into the crust. Sprinkle streusel over the top.
  6. Bake covered for 30 minutes; then uncover and bake for an additional 15-20 minutes until golden brown and bubbling.
  7. Cool completely on a wire rack before serving.
