- 1 9-inch refrigerated rolled pie crust
- 18 ounces fresh blueberries
- 1/3 cup granulated sugar
- 3 tablespoons raspberry preserves (optional)
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 2 & 1/2 tablespoons cornstarch
- 2/3 cup all-purpose flour
- 1/3 cup packed brown sugar
- 5 tablespoons butter (chilled and cubed)
Instructions
- Preheat your oven to 425°F (220°C). Lightly coat a 9-inch pie plate with nonstick spray.
- Roll out the pie dough and press it into the pie plate. Freeze while preparing the filling.
- In a bowl, combine blueberries, sugar, raspberry preserves (if using), lemon juice, zest, vanilla extract, and cornstarch. Set aside for 15 minutes.
- For the streusel topping, mix flour, brown sugar, granulated sugar, and cinnamon in another bowl. Cut in butter until crumbly; chill covered.
- Pour the blueberry mixture into the crust. Sprinkle streusel over the top.
- Bake covered for 30 minutes; then uncover and bake for an additional 15-20 minutes until golden brown and bubbling.
