- 1 lemon (zest and juice)
- Pinch of saffron threads
- 1 tsp red pepper flakes
- 1 tbsp chili powder
- 1 tsp oregano
- Salt and pepper, to taste
- 1 bay leaf
- ½ bunch parsley, chopped
- 1 red bell pepper, chopped
Instructions
- Marinate the cubed chicken in chili powder, oregano, olive oil, salt, and pepper.
- In a large skillet or paella pan, heat 2 tablespoons of olive oil over medium heat. Sauté garlic and red pepper flakes for about 30 seconds before adding the rice; cook for 3 minutes until lightly toasted.
- Pour in chicken stock, lemon juice, saffron threads, and bay leaf. Bring to a simmer and cook uncovered for about 20 minutes until most liquid is absorbed.
