  • 1 lb peeled and deveined shrimp
  • 1 lb crumbled chicken sausage
  • 2 cups short-grain white rice
  • 1 quart chicken stock
  • 4 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1 lemon (zest and juice)
  • Pinch of saffron threads
  • 1 tsp red pepper flakes
  • 1 tbsp chili powder
  • 1 tsp oregano
  • Salt and pepper, to taste
  • 1 bay leaf
  • ½ bunch parsley, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Marinate the cubed chicken in chili powder, oregano, olive oil, salt, and pepper.
  2. In a large skillet or paella pan, heat 2 tablespoons of olive oil over medium heat. Sauté garlic and red pepper flakes for about 30 seconds before adding the rice; cook for 3 minutes until lightly toasted.
  3. Pour in chicken stock, lemon juice, saffron threads, and bay leaf. Bring to a simmer and cook uncovered for about 20 minutes until most liquid is absorbed.
  4. In a separate pan, heat remaining olive oil and brown the marinated chicken. Stir in crumbled sausage and chopped bell pepper; add shrimp last until pink.
  5. Remove bay leaf from the rice mixture; stir in parsley and lemon zest before serving topped with the meat mixture.
