- 2 3/4 cups (345 g) all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (226 g) unsalted butter, cold and cubed
- 3/4 cup (150 g) light brown sugar, packed
- 2/3 cup (130 g) granulated sugar
- 1 egg, plus 1 egg yolk, room temperature
- 2 teaspoons vanilla
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F. Line two large baking sheets with parchment paper. Set aside while you prepare the doughs.
- In the bowl of a stand mixer, combine the room-temperature butter and brown sugar. Mix for about 3 minutes until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Sift this mixture into the wet ingredients.
- Mix on low speed until just combined; ensure all flour is incorporated.
- Gently stir in semi-sweet chocolate chips using a spatula. Set this dough aside.
- In the stand mixer fitted with a paddle attachment, add cold butter cubes along with brown sugar and granulated sugar. Mix on low speed then increase to medium-high for about 4 minutes until pale and fluffy.
- Add in one egg followed by the egg yolk one at a time, scraping down between additions.
- Mix in vanilla extract until fully integrated.
- Whisk together flour, cornstarch, baking soda, and salt in another bowl before adding it to the mixer in two portions; mix on low until just combined.
- Fold in chocolate chips gently with a spatula without overmixing.
- Using a small cookie scoop, scoop out both types of dough into balls—make chocolate chip cookie dough balls slightly larger than brownie ones for balance.
- Roll each type into uniform balls using your hands or kitchen scale for accuracy.
- Take one brownie dough ball and one chocolate chip dough ball; press them together firmly then roll them into one single ball.
- Place on prepared baking sheets about 2 inches apart.
- Bake one sheet at a time in the center of your oven for about 8-9 minutes or until edges are set but tops remain soft—do not overbake!
- After removing from oven, let cool on sheets for about 5-10 minutes before transferring to wire racks to cool completely.
