Ingredients

  • 4 Roma tomatoes
  • ¼ cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 8 oz feta cheese, crumbled
  • ½ block cream cheese (4 oz)
  • ½ cup sour cream
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste

Instructions

  1. In a mixing bowl, combine chopped Roma tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, and salt. Let sit for 10 minutes.
  2. In another bowl, blend crumbled feta cheese, softened cream cheese, sour cream, minced garlic, lemon juice, and olive oil until smooth.
  3. Gently fold the tomato mixture into the cheese mixture until well combined.
  4. Transfer to a serving dish and garnish with additional basil leaves and red pepper flakes. Serve with crackers or toasted bread.
