  • 8 Russet potatoes, peeled and diced
  • ¼ cup buffalo sauce
  • 2 tablespoons extra virgin olive oil
  • 2 pounds boneless, skinless chicken breasts, diced
  • 1 cup mild cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 810 slices thick-cut turkey bacon, cooked and crumbled
  • Sour cream for serving
  • Green onions for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss diced potatoes with olive oil, buffalo sauce, ranch seasoning mix, and black pepper until well coated. Spread evenly on the prepared baking sheet.

  5. Sprinkle shredded cheeses and crumbled turkey bacon on top.
