  • 4 1/2 pounds chuck roast (cut into 2- to 3-inch chunks)
  • 2 tablespoons crushed red peppers
  • 1 large onion (sliced)
  • 1 bunch parsley (chopped)
  • 6 to 8 cloves garlic (smashed)
  • 2 bay leaves
  • 1/2 teaspoon allspice berries
  • 4 whole cloves
  • Salt (to taste)
  • 3 tablespoons unsalted butter
  • 2 cups apple vinegar
  • 2 tablespoons tomato paste
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Marinate the beef overnight with crushed red pepper in a large bowl.
  2. In a Dutch oven, layer onion slices, parsley, garlic, and bay leaves at the bottom.
  3. Place allspice berries and cloves in cheesecloth; add them to the pot. Season beef with salt before placing it atop the aromatics.
  4. Mix apple vinegar, tomato paste, and cinnamon; pour over the beef.
  5. Bring to a boil; reduce heat to low and simmer for about 3 to 3.5 hours until meat is tender.
