  • 12 oz rotini pasta
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic
  • Cajun seasoning to taste
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Boil salted water in a large pot; cook rotini until al dente (9-10 minutes). Drain, reserving 1 cup of pasta water.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper.
  3. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat; sear the chicken for 7-8 minutes until golden brown. Add half the minced garlic in the last minute.
  4. Lower heat; add remaining butter and garlic to the skillet, sauté for 30 seconds.
  5. Pour in heavy cream; simmer for 2-3 minutes until slightly thickened.
  6. Stir in mozzarella and Parmesan cheese until melted.
  7. Combine cooked rotini with sauce; adjust consistency using reserved pasta water as needed.
