Description

  • 1 1/2 cups dry Calrose sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab (chopped)
  • 1/2 cup diced English cucumber
  • 1 large avocado (sliced)
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • Nori sheets (for topping)
  • Black and toasted sesame seeds (for garnish)

Instructions

  1. Rinse the sushi rice under cold water using a mesh sifter until the water runs clear. Add the rinsed rice and water to a rice cooker and cook according to the machine's instructions.
  2. Once cooked, transfer the rice to a rimmed baking sheet. Gently fold in seasoned rice vinegar using a rice paddle and let it cool completely.
  3. In a small bowl, combine Japanese mayonnaise and sriracha. Mix until well blended.
  4. Chop the imitation crab and dice the cucumber. Slice the avocado.
  5. To assemble, add cooled sushi rice to individual bowls. Top with chopped crab, cucumber, sliced avocado, and drizzle with spicy mayo. Garnish with nori pieces and sesame seeds.
