Ingredients

  • 3 organic oranges
  • 2 cups water
  • 1 cup sugar (plus more for coating)
  • Chocolate (for optional coating)

Instructions

  1. Thoroughly wash the oranges with a vegetable brush.
  2. Cut off the tops and bottoms, then score the peel lengthwise into four sections without cutting into the flesh.
  3. Remove the peel sections and slice them into strips about 1/4-inch wide.
  4. Boil the peel strips in water for 5 minutes, drain, and repeat this process to reduce bitterness.
  5. In a pot, combine blanched peels with 2 cups water, 1 cup sugar, and an optional vanilla bean. Simmer uncovered for 30-35 minutes until translucent.
  6. Allow peels to cool in syrup for 5 minutes before transferring to a drying rack over parchment paper. Let dry for at least 8 hours or up to 24 hours.
  7. Once dried, coat with granulated sugar and optionally dip in melted chocolate.
