Ingredients
- 3 organic oranges
- 2 cups water
- 1 cup sugar (plus more for coating)

Instructions
- Thoroughly wash the oranges with a vegetable brush.
- Cut off the tops and bottoms, then score the peel lengthwise into four sections without cutting into the flesh.
- Remove the peel sections and slice them into strips about 1/4-inch wide.
- Boil the peel strips in water for 5 minutes, drain, and repeat this process to reduce bitterness.
- In a pot, combine blanched peels with 2 cups water, 1 cup sugar, and an optional vanilla bean. Simmer uncovered for 30-35 minutes until translucent.
- Allow peels to cool in syrup for 5 minutes before transferring to a drying rack over parchment paper. Let dry for at least 8 hours or up to 24 hours.
- Once dried, coat with granulated sugar and optionally dip in melted chocolate.
