- 1 1/4 pounds boneless skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 5 ounces baby spinach
- 1 cup cherry tomatoes (halved)
- 1 cup mini fresh mozzarella balls
- 1/3 cup plain Greek yogurt
- 2 tablespoons pesto
Instructions
- In a bowl, whisk together balsamic vinegar, pesto, olive oil, honey, salt, and pepper to create the marinade.
- Season chicken breasts with salt and pepper. Place them in a gallon-size freezer bag and add the marinade. Seal the bag and massage the marinade into the chicken. Refrigerate for at least one hour or overnight.
- Preheat your grill to medium-high heat. Grill chicken for about 4–6 minutes per side until cooked through (165°F). Let rest before slicing.
- In a separate bowl, mix Greek yogurt, low-fat milk, pesto, parmesan cheese, vinegar, granulated garlic, salt, and pepper to make the dressing.
- On a serving platter or bowl, layer baby spinach as a base. Top with cherry tomatoes, mozzarella balls, sliced grilled chicken, and drizzle with dressing.
