- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, brown sugar, melted butter, and cinnamon; press into a springform pan and bake for 8–10 minutes.
- Beat cream cheese and granulated sugar until smooth; add eggs one at a time, then vanilla extract and sour cream. Pour over cooled crust and bake for 30–35 minutes until just set.
- Cool completely before refrigerating for at least 2 hours.
- In a skillet, melt butter and cook diced apples with brown sugar, cinnamon, and lemon juice for about 5–7 minutes until soft.
- Prepare crumble topping by mixing flour, brown sugar, oats, and melted butter; toast in skillet or bake until golden.
