Ingredients

  • 3 ripe peaches
  • 3 Tbsp butter (or coconut oil)
  • 2 Tbsp brown sugar
  • 1 tsp vanilla extract
  • 4 Tbsp rolled oats
  • 3 Tbsp oat flour
  • ½ tsp cinnamon
  • Vanilla ice cream (optional)

Instructions

  1. Wash and dry the peaches. Slice them in half and remove pits.
  2. In a skillet over medium heat, melt 2 Tbsp of butter with brown sugar and vanilla until simmering.
  3. Add peach halves cut side down, cover, and cook for 3-5 minutes until caramelized.
  4. Transfer peaches to a dish; let cool slightly while preparing the oat crumble.
  5. In the same skillet, combine oats, oat flour, cinnamon, and remaining butter until clusters form; let cool for 5 minutes.
  6. Serve warm peaches topped with ice cream and sprinkle with oat crumble.
