  • 2 heads romaine lettuce (chopped)
  • 3 celery stalks (chopped)
  • 1/2 cup red onion (thinly sliced)
  • 1 cup sharp cheddar cheese (chopped)
  • 2 gala apples (thinly sliced)
  • Freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • Juice of 1/2 lemon
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chopped romaine lettuce, celery, red onion, cheddar cheese, and gala apples. Add black pepper to taste.
  2. For the dressing, mix olive oil, lemon juice, Dijon mustard, red apple vinegar, oregano, salt, and pepper in a jar. Shake well.
