  • 1 tart apple (Granny Smith or Pink Lady)
  • 1/4 cup chopped curly leaf parsley
  • 1/4 cup sliced almonds
  • 1/4 cup chopped pistachios
  • 3 ounces firm blue cheese, crumbled
  • 1/4 cup lemon juice
  • 1/4 cup minced shallot
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash celery stalks thoroughly and slice into thin pieces. Add to a large salad bowl.
  2. Cut the apple into matchstick-sized slices and add them to the bowl.
  3. Toast the pistachios and almonds in a dry skillet over medium heat until fragrant; set aside to cool.
  4. Add crumbled blue cheese and chopped parsley to the bowl. Toss gently to combine.
  5. In a jar, mix lemon juice, shallot, honey, and Dijon mustard; shake well.
  6. Add olive oil to the jar; shake again until emulsified. Season with salt and pepper.
  7. Drizzle dressing over the salad mixture; toss until evenly coated.
  8. Taste and adjust seasoning if necessary before serving.
