  • 6 chai tea bags
  • ¼ teaspoon ground ginger
  • 3 teaspoons powdered vegan gelatin
  • 1 ½ cups heavy cream
  • ⅓ cup granulated sugar
  • ¼ cup sugar (for pistachio toffee)
  • 1 tablespoon chopped pistachios

Instructions

  1. In a saucepan, heat 1 cup of whole milk with chai tea bags and spices until simmering. Let steep for about 10 minutes.
  2. In a mixing bowl, bloom the vegan gelatin in ¾ cup cold milk for about 5 minutes.
  3. Strain the chai mixture into the saucepan, stir in sugar until dissolved, then add bloomed gelatin and mix well.
  4. Incorporate heavy cream and vanilla extract until smooth.
  5. Pour into serving glasses or ramekins, cover with plastic wrap, and refrigerate for at least four hours or until set.
  6. For the pistachio toffee, cook sugar and water until golden brown, add chopped pistachios quickly, then cool before garnishing your panna cotta.
