  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and freshly cracked black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Cook the twisted pasta in salted boiling water until al dente (9-10 minutes). Reserve some pasta water, then drain.
  2. Toss chicken cubes with olive oil, Cajun seasoning, garlic powder, and smoked paprika.
  3. Sauté seasoned chicken in a skillet until browned and cooked through (6-8 minutes).
  4. In the same skillet, melt butter and sauté minced garlic; whisk in flour to create a roux.
  5. Gradually add milk while whisking until thickened; stir in Velveeta and cream cheese until melted.
  6. Combine cooked pasta and chicken into the sauce; toss gently to coat.
