- 1 cup Monterey Jack cheese (grated)

- ½ medium onion (diced)
- 2 to 3 garlic cloves (minced)
- ¼ cup all-purpose flour
- 1 cup low sodium chicken broth
- 1 ½ cups milk
- 2 cups crushed cornflakes
Instructions
- Preheat your oven to 350°F and lightly grease a 9×13 baking dish.
- In a bowl, combine the grated cheeses and set aside.
- In a large bowl, mix the defrosted hash browns with melted butter, salt, and pepper until evenly coated.
- Stir in sour cream and half of the combined cheese mixture.
- Layer the potato mixture into the baking dish and top with remaining cheese.
- For the cornflake topping: melt butter and mix with crushed cornflakes; sprinkle over the casserole.
- Bake for about 30–35 minutes or until golden brown and bubbly.
