Description

  • 32 ounces diced hash brown potatoes (or shredded, defrosted)
  • 4 tablespoons unsalted butter (melted)
  • 1 ½ cups sour cream
  • 2 cups sharp cheddar cheese (grated)
  • 1 cup Monterey Jack cheese (grated)
  • 4 tablespoons unsalted butter
  • ½ medium onion (diced)
  • 2 to 3 garlic cloves (minced)
  • ¼ cup all-purpose flour
  • 1 cup low sodium chicken broth
  • 1 ½ cups milk
  • 2 cups crushed cornflakes

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13 baking dish.
  2. In a bowl, combine the grated cheeses and set aside.
  3. In a large bowl, mix the defrosted hash browns with melted butter, salt, and pepper until evenly coated.
  4. Stir in sour cream and half of the combined cheese mixture.
  5. Layer the potato mixture into the baking dish and top with remaining cheese.
  6. For the cornflake topping: melt butter and mix with crushed cornflakes; sprinkle over the casserole.
  7. Bake for about 30–35 minutes or until golden brown and bubbly.
