  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar (or additional chicken broth)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season chicken pieces with salt and pepper, then cook until golden brown (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté sliced mushrooms until tender (4-5 minutes), then add minced garlic and stir for an additional minute.
  4. Pour in the chicken broth and Marsala apple vinegar; bring to a simmer. Reduce heat and mix in heavy cream and Parmesan cheese until creamy.
  5. Return the chicken to the skillet, add cooked pasta, and toss gently to coat everything in the sauce.
  6. Garnish with fresh parsley before serving.
