- 4 bone-in, skin-on chicken thighs
- 3 tablespoons extra-virgin olive oil
- 4 anchovy filets, minced
- 4 cloves garlic, minced
- 1/2–1 teaspoon red pepper flakes, to taste
- 1 tablespoon tomato paste
- 1/3 cup chicken broth
- 1 (28-ounce) can crushed San Marzano tomatoes
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons capers
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper
- Lemon wedges, for serving
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down until golden brown (5-6 minutes), then flip and cook for another 3-4 minutes. Remove from pan.
- In the same pan, add anchovies and garlic; cook until fragrant. Stir in tomato paste.
- Deglaze with chicken broth, scraping browned bits from the pan. Add crushed tomatoes and simmer gently for 25-30 minutes.
- Return chicken to the pan; let it simmer uncovered for an additional 5-10 minutes if needed to thicken the sauce.
