  • 1 cup bean sprouts
  • ½ cup shredded carrots
  • ½ cup chopped green onions
  • ½ cup diced cooked shrimp (or chicken, beef, or tofu)
  • ¼ cup sliced mushrooms (shiitake or white button)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon white pepper
  • ¼ teaspoon salt
  • 2 tablespoons all-purpose flour (for binding)
  • Neutral oil for frying (canola or vegetable oil work best)
  • 1½ cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Gather all ingredients and chop the vegetables and protein.
  2. In a mixing bowl, whisk together eggs, soy sauce, sesame oil, white pepper, salt, and flour until smooth.
  3. Fold in the bean sprouts, carrots, green onions, protein of choice, and mushrooms.
  4. Heat a non-stick skillet over medium heat with a splash of oil. Pour about ¼ cup of the egg mixture per patty into the skillet.
  5. Cook for 3–4 minutes until edges are set; flip and cook for another 2–3 minutes until golden brown.
  6. For the gravy: In a saucepan over medium heat, combine broth, soy sauce, oyster sauce, and sugar. Add cornstarch-water mixture to thicken.
  7. Serve egg foo young with the gravy poured over top and garnish as desired.
