Ingredients

  • 1 cup butter (room temperature)
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together room-temperature butter and sugar until light and fluffy.
  3. Add eggs one at a time followed by vanilla, mixing well after each addition.
  4. Combine cocoa powder, salt, baking soda, baking powder, and flour into the mixture, stirring until smooth.
  5. Roll dough into 1-inch balls on the prepared sheet, pressing your thumb into the center of each ball.
  6. Bake for about 12 minutes; if thumbprints don’t hold, gently press again right after removing from the oven.
  7. For the fudge filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat while stirring continuously. Add mint extract once smooth.
  8. Fill each cookie well with melted fudge and drizzle with melted chocolate almond bark once cooled.
