  • ½ cup glutinous rice flour
  • ⅛ cup cocoa powder
  • 1 tbsp powdered sugar
  • 120 ml water
  • 2 cups chocolate ice cream
  • ¾ cup cornstarch (for dusting)

Instructions

  1. Scoop chocolate ice cream into individual paper cups (1/3 cup each) and freeze for 30 minutes.
  2. In a mixing bowl, combine glutinous rice flour, cocoa powder, and powdered sugar; gradually add water to form a smooth batter.
  3. Steam the mochi mixture for about 15 minutes until cooked through.
  4. Dust a tray with cornstarch, transfer cooked mochi to the tray, and dust with more cornstarch.
  5. Roll out the mochi to about 2-4 mm thickness and cut into squares.
  6. Place each ice cream scoop onto a mochi square, pinch to seal, wrap in cling film, and freeze again.
