  • 1 cup hot coffee (or hot water)
  • 1 cup orange juice (freshly squeezed, strained)
  • 1 tbsp orange zest
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 8 oz (225 g) dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Fresh orange slices or candied orange peel

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and vanilla; mix until smooth. Stir in hot coffee until fully incorporated.
  3. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely in pans before transferring to a cooling rack.
  4. For the orange filling, combine sugar, cornstarch, and egg yolks in a saucepan. Gradually whisk in orange juice and cook over medium heat until thickened. Stir in orange zest and butter; cool completely.
  5. For ganache, heat heavy cream until steaming but not boiling; pour over chopped chocolate and let sit for 2 minutes. Stir until smooth and add butter.
  6. Assemble by layering cake with orange filling between layers and topping with ganache.
