- 1 cup raspberries
- 1/2 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1 tablespoon chia seeds
- 1/4 cup melted coconut oil
- 1/4 cup cocoa powder or 1/2 cup melted dark chocolate
- 2 tablespoons maple syrup
Instructions
- Line a muffin tin with silicone liners.
- For the raspberry filling, simmer raspberries and maple syrup in a pot for about 8-10 minutes, mash them, then mix in vanilla and chia seeds; let cool.
- In a bowl, combine melted coconut oil, cocoa powder (or dark chocolate), and maple syrup to create the chocolate mixture.
- Pour chocolate into each muffin liner (1 tablespoon each) and freeze for 5 minutes until firm.
- Add cooled raspberry mixture on top of the chocolate layer; freeze again for another 5 minutes.
- Top with remaining chocolate mixture; freeze until completely set (about 2 hours).
- Store in the freezer until ready to serve; thaw slightly before enjoying.
